Meet the Chef: Caroline McGinley

Caroline McGinley is the proud owner and baker behind Gringuita Cookies, an upscale cookie bakery. She’s best known for her giant quarter pound stuffed cookies. The name “Gringuita” means "little American girl" in Spanish and was a name that was given to her while traveling in South America.

Tips and Tricks for Irresistible Cookies

1. Let Cookie Dough sit overnight - The flour will absorb some of the moisture, leaving you with a more flavorful and firmer dough.

2. When stuffing cookies use a tablespoon to scoop and freeze - If you want to stuff your cookies, use a tablespoon to scoop the Nutella onto a baking sheet with parchment paper and place it in the freezer. Once frozen, take a ball of chocolate chip cookies dough and flatten it with your hands. Place the frozen Nutella in the middle of the dough and wrap the dough around the Nutella. You can bake the cookie dough ball following the recipe's original instructions.
