Ingredients


Blondies

  • ½ cup coconut oil, melted
  • ½ cup unsweetened applesauce
  • 1 ¾ cups (350 g) Florida Crystals® Regenerative Organic Certified® Light Brown Sugar, tightly packed
  • 2 large eggs, room temperature
  • 1 large egg yolk, room temperature
  • 1 ½ tsp vanilla extract
  • 2 ½ cups (285 g) all-purpose flour or gluten-free flour
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • 1 tsp salt

Cinnamon Layer

  • 2 tbsp butter or coconut oil, melted
  • ¼ cup Florida Crystals® Regenerative Organic Certified® Light Brown Sugar
  • 2 tsp cinnamon

Cream Cheese Frosting

  • 3 oz cream cheese, softened
  • ¼ cup unsalted butter softened
  • 1 ½ cups Florida Crystals® Regenerative Organic Certified® Powdered Sugar, sifted
  • 1 tsp vanilla extract
  • 1 pinch salt

Instructions

Step 1

Preheat the oven to 350°F and prepare a 9×9-inch pan by lining it with parchment paper (or lightly grease and flour). (You could use a 9×13-inch pan for more servings, but the bars will be thinner.)

For the Blondies

Step 1

Whisk melted coconut oil, applesauce, and Florida Crystals® Regenerative Organic Certified® Light Brown Sugar in a large bowl until fully incorporated.

Step 2

Add the eggs and the egg yolk, one at a time, whisking well after each addition. Whisk in the vanilla extract.

Step 3

In a separate, medium-sized bowl, whisk together the flour, cornstarch, baking powder, and salt.

Step 4

Using a rubber spatula, gradually stir the flour mixture into the butter and egg mixture until completely combined. Set aside as you prepare the cinnamon-sugar layer.

For the Cinnamon Layer

Step 1

In a small bowl combine melted butter (or coconut oil), Florida Crystals® Regenerative Organic Certified® Light Brown Sugar, and cinnamon; mix well.

To Assemble

Step 1

Spread half the blondie batter into the bottom of the lined baking dish. (The batter is thick.)

Step 2

Evenly spread the cinnamon layer over the blondie batter.

Step 3

Add the remaining blondie batter on top, spreading it out to the edges of the pan.

Step 4

Bake for 35-38 minutes, or until the edges just begin to turn golden brown and the center is no longer jiggly.

Step 5

Allow the bars to cool completely before adding the cream cheese frosting.

For the Cream Cheese Frosting

Step 1

Put cream cheese, butter, Florida Crystals® Regenerative Organic Certified® Powdered Sugar, vanilla, and salt in a stand mixer fitted with the paddle attachment.

Step 2

Mix on low until just combined. Once the ingredients are incorporated, turn the mixer on high and leave it for 4-5 minutes. Frosting should be light and fluffy.

Step 3

Spread frosting over cooled blondies.
