Ingredients
Muffins
- 1 tbsp flax seeds
- 3 ripe bananas
- 1/3 cup organic apple sauce
- 1/3 cup Florida Crystals® Regenerative Organic Light Brown Sugar
- Vanilla to taste
- Dash of cinnamon
- Dash of salt
- 1 1/2 cup whole wheat pastry flour
- 1/2 tsp baking soda
Coffee Crumble
- 1 cup whole wheat pastry flour
- 1 cup Florida Crystals® Regenerative Organic Light Brown Sugar
- 6 tbsp vegan butter
- Cinnamon to taste
Instructions
Step 1
Set your oven to 350ºF.
Step 2
Add your flax seed and 3 tbsp water to a small bowl, mix, and set aside to thicken.
Step 3
Meanwhile add your mashed banana, apple sauce, Florida Crystals® Regenerative Organic Certified® Light Brown Sugar, vanilla, cinnamon, and salt to a large bowl.
Step 4
Next add your dry ingredients: whole wheat pastry flour and baking soda. Mix together.
Step 5
Now make your coffee crumble by mixing whole wheat pastry flour, Florida Crystals® Regenerative Organic Certified® Light Brown Sugar, vegan butter, and cinnamon until it has a sandy consistency.
Step 6
Grab your muffin tin and your cupcake paper cups. Gently begin to add the wet batter about ¾ of the surface space of the paper cups then top with 1 tbsp of the coffee crumble mixture.
Step 7
Bake for 30-40 minutes or until a toothpick comes out clean. Then enjoy!
