Step 1

Combine the rice, cinnamon stick, and hot water in a container. Allow the mixture to cool down. Cover and refrigerate for at least 8 hours or overnight.

Step 2

Remove the cinnamon stick and blend the mixture for 2-3 minutes. Pour the mixture through a fine mesh strainer or cheesecloth into a pitcher. Discard the rice. Stir in the sugar, evaporated milk, whole milk, cold water, vanilla, and cinnamon. Mix until well combined. When ready to serve, add ice.

Additional Tips

To make Horchata Popsicles, add horchata mixture into popsicle molds. Place in the freezer. After 1 hour place a popsicle stick into each of the molds. Freeze for 6 hours.
