Ingredients
Crust
- ¾ cup unsalted butter, frozen
- 2 ¼ cup all-purpose flour
- 2 tbsp Florida Crystals® Regenerative Organic Certified® Light Brown Sugar (tightly packed)
- ½ tsp salt
- ¼ cup + 2 tbsp cold water
- Optional: whipped cream and egg wash for decorative cutouts
Filling
- 1 ½ lb sweet potato, peeled and cubed
- ½ cup unsalted butter, softened
- 1 cup Florida Crystals® Regenerative Organic Certified® Light Brown Sugar (tightly packed)
- 2 large eggs
- ½ cup milk of choice
- 1 tsp pumpkin pie spice
Optional Whipped Cream
- ⅓ cup heavy whipping cream
- 2 tbsp Florida Crystals® Regenerative Organic Certified® Powdered Sugar
Instructions
Pie Instructions
Step 1
Preheat the oven to 350°F. Bring 10 cups of water to a boil. Add the cubed sweet potato and boil until the sweet potato is fork-tender (~10 minutes).
Step 2
Meanwhile, make the crust. Add the flour, butter, brown sugar, and salt to a food processor and blend on high for about 10-15 seconds, until the butter just starts to cut into the flour.
Step 3
With the processor on, add the cold water and blend for an additional 5-10 seconds until dough starts to form.
Step 4
Turn the dough out onto a clean surface and use your hands to bring it together, working in any excess flour. Optional: use about ¼ of the dough and cookie cutters to cut out decorative shapes. Place them on a baking sheet. Press the rest of the dough into the baking dish, using your fingers to push the dough up the sides of the dish and to crimp the edges.
Step 5
Strain the sweet potato and add it to a large mixing bowl. Add the softened butter and beat with a hand mixer to combine.
Step 6
Add the brown sugar, eggs, milk, and pumpkin pie spice and combine. You will notice some separation of the butter.
Step 7
Pour the filling into the crust and smooth it out in an even layer. Bake on the top rack for 55-75 minutes until mostly firm. If you are making the optional decorative cut-outs, add them to the oven for the last 15 minutes of baking to brown them.
Step 8
Allow to cool and set before slicing in. Decorate and enjoy!
Optional Whipped Cream Instructions
Add the cream and sugar to a large mixing bowl and beat with a hand mixer until stiff peaks form.
