Ingredients


For the dressing


For the salad

  • 1 package Ramen noodles, crumbled in small chunks 
  • ½ cup Sliced almonds
  • 1 tablespoon Sesame seeds
  • 1 (16 ounces) package Tri color coleslaw mix
  • ½ cup Green onions, sliced
  • 2 tablespoons Fresh cilantro, chopped

Instructions

Step 1

Preheat oven to 325°F. Line one baking sheet with parchment paper. Place ramen noodles, almonds and sesame seeds on the pan and roast for 8 minutes. Remove from heat and set aside.

Step 2

Combine all the ingredients for the dressing and whisk until well combined.

Step 3

In a large bowl, toss together the coleslaw, green onions, and cilantro. Pour the dressing over the salad and toss until well combined. Add ramen, almonds, and sesame seeds. Toss and serve. Garnish with fresh cilantro leaves.

Additional Tips

Seasoning packets from the ramen are not used in the recipe. Discard or set aside for another use.

Top the salad with grilled chicken or salmon for a delicious lunch meal.
