Ingredients
For the cookies
- 2 cups All-purpose flour
- ¼ cup Cocoa powder
- ¾ teaspoon Baking soda
- ½ teaspoon Salt
- ½ cup Vegetable oil of choice
- 1 large Egg
- 1 cup Florida Crystals® Regenerative Organic Raw Cane Sugar
- ½ cup Buttermilk
- ¾ teaspoon Natural red food coloring
- 1 tablespoon Apple cider vinegar
For cream cheese frosting
- ½ cup (1 stick) Unsalted butter, at room temperature
- 1 (8 ounces) package Cream cheese, at room temperature
- 4 cups Florida Crystals® Regenerative Organic Powdered Sugar, sifted
- 2 teaspoons Pure vanilla extract
- pinch Salt
Instructions
Step 1
Preheat oven to 350°F. Line three baking sheets with parchment paper.
Step 2
In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt.
Step 3
In a large bowl, whisk together the rest of the ingredient and mix until well combined. Add flour-cocoa mixture and mix until just combined.
Step 4
Transfer the dough to a pastry bag fitted with a large round tip. Pipe cookies about 1-inch in diameter. Lightly wet a finger and tap down any spikes on top. Bake for 8-10 minutes or until set. Remove from oven and let cool completely.
Step 5
While the cookies are cooling down, prepare the frosting. In a large bowl, beat butter and cream cheese at medium speed until smooth and creamy. About 2-3 minutes. Reduce speed to low and add Florida Crystals® Regenerative Organic Powdered Sugar, vanilla, and salt. When all ingredients are combined, increase the speed to medium and beat for 1 to 2 more minutes, until well combined.
Step 6
Using a pastry bag fitted with a star tip, pipe frosting on the flat side of half the cookies. Press the rest of the cookies on top. Serve.
