Ingredients


For the rice


For the toppings

  • 1 cup English cucumber, sliced
  • 1 cup Cherry tomatoes, halved
  • ½ Red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup Hummus
  • 1 cup Feta cheese, cubed
  • 1 Watermelon radish, thinly sliced
  • 4 teaspoons Olive oil
  • Salt and pepper, to taste
  • Fresh oregano, as garnish

Instructions

Step 1

Prepare the rice. Measure 1 cup of rice and pour into a strainer. Rinse rice with running cool water until the water is clear pouring out of the strainer.

Step 2

Measure 2 cups of water and pour in saucepan, add salt. Bring water to a boil. Add rice.

Step 3

Reduce heat to low; so that the water will simmer. Cover saucepan with a tight-fitting lid. Cook rice for 25 minutes. Once rice has been cooked, remove from heat, but let the rice sit covered for 5 minutes. After sitting, fluff rice with a fork or a spoon.

Step 4

Assemble the bowls. In four bowls, divide the brown rice. Arrange the cherry tomatoes, kalamata olives, cucumbers, onions, radish, and cheese around the plate. Spoon hummus into the center of the bowl. Add olive oil and salt and pepper to taste. Garnish with fresh oregano. Serve immediately.
