Ingredients
- 6 tablespoons Unsalted butter
- 1 ¼ cups, divided Milk chocolate chips
- 1 cup All-purpose flour
- ¼ cup Dutch process cocoa powder
- ¾ teaspoon Baking powder
- ½ teaspoon Salt
- 3 large Eggs, at room temperature
- ½ cup Florida Crystals® Regenerative Organic Raw Cane Sugar
- ½ cup Florida Crystals® Regenerative Organic Light Brown Sugar
- 1 tablespoon Sunflower oil
- 1 teaspoon Pure vanilla extract
- 1 cup Mini marshmallows
Instructions
Step 1
Preheat oven to 350°F. Line two baking sheets with parchment paper and set aside.
Step 2
Add butter and 1 cup of chocolate chips and melt in stove top. You may also add them to a heatproof bowl and microwave in 30-second increments if preferred. Stir until well combined. Set aside.
Step 3
In a small bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
Step 4
In a large bowl, beat eggs and both sugars at medium speed until pale and doubled in volume. Reduce the speed and slowly add oil and vanilla. Mix until just combined. Add chocolate mixture, beat until combined. Scrape the sides of the bowl as needed. Add flour-cocoa mixture and beat until just combined. Using a spatula, mix in the remaining ¼ cup of chocolate chips and ½ cup of marshmallows.
Step 5
Using an ice cream scoop, drop batter into the prepared pans spacing the cookies at least 1 ½-inches apart.
Step 6
Bake for 8-10 minutes or until the edges of the cookies are set. As soon as the cookies come out of the oven, add the remaining ½ cup of marshmallows on top of the cookies. Allow the cookies cool in the pan for 5 minutes and then transfer to a cooling rack.
Additional Tips
For peppermint hot chocolate cookies, crush 2-3 peppermint candy canes and add to the dough with the marshmallows and chocolate chips. Reserve some to sprinkle on top of the cookies as soon as they come out of the oven.
You may use avocado, canola, peanut, or grapeseed oil as preferred for frying.
