Instructions

Step 1

Preheat the oven to 400°F and line a muffin tin.

Step 2

In a large bowl, whisk together flour, both sugars, cinnamon, salt, and baking powder.

Step 3

Add the apple sauce, oil, eggs, and vanilla extract and whisk again until smooth.

Step 4

Fold in the carrots and fill your muffin cups about ¾ of the way.

Step 5

Bake on the top rack for 18-22 minutes. Allow to cool completely before frosting.

Step 6

While your muffins are cooling, make your cream cheese frosting. To a large bowl, add the softened cream cheese, powdered sugar, vanilla extract, and spices and use a hand mixer on high to whip until smooth.

Step 7

Optional: Add about ¼ cup of frosting each into two small bowls. Add a few drops of green food coloring to one, and a drop of red and 2 drops of yellow food coloring to the other. Mix to make colored frosting for your carrot design.

Step 8

Transfer your frosting to a piping bag and generously top each muffin. For the optional carrot design, draw 3 thin green lines spreading out from a point to represent the carrot leaves, then pipe a thicker orange line from the tip of your leaves to represent the carrot. Enjoy!
