Ingredients
For the Brown Sugar Cupcakes
- 1 ¾ cups flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup unsalted butter, softened
- 1 cup Florida Crystals® Regenerative Organic Light Brown Sugar
- 2 large eggs, room temperature
- ⅓ cup sour cream, room temperature
- ¼ cup vegetable oil
- 2 teaspoons vanilla extract
- ½ cup milk, room temperature
For the Cream Cheese Frosting
- ½ cup butter, softened
- 8 oz cream cheese, softened
- 1 teaspoon vanilla extract
- 4 cups Florida Crystals® Regenerative Organic Powdered Sugar
Instructions
For the Brown Sugar Cupcakes
Step 1
In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
Step 2
In a large mixing bowl, beat together the butter and brown sugar until light and creamy, about 2 minutes. Add the eggs, beating well after each addition. Beat in the vanilla extract, sour cream and vegetable oil.
Step 3
Gradually add in the flour mixture in three parts, alternating with milk. Mix until batter is uniform and smooth (do not over mix).
Step 4
Fill baking cups about 3/4 full and bake for 20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven, transfer cupcakes to a wire rack and allow to cool.
For the Cream Cheese Frosting
Step 5
Mix the first three ingredients with an electric mixer until creamy. Slowly add the powdered sugar until well combined.
