Ingredients


For the bars

  • 3 tablespoons Coconut oil
  • 1/3 cup Almond butter
  • 1 cup Florida Crystals® Regenerative Organic Light Brown Sugar, packed
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Almond extract (optional)
  • ½ cup 1:1 Gluten free flour
  • ½ teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 2 cups Florida Crystals® Regenerative Organic Certified® Long Grain Brown Rice, cooked and cooled
  • ¾ cup Chopped dried apricots
  • ¾ cup Chopped unsalted pistachios
  • 4 ounces Coconut chips

Instructions

Step 1

Preheat oven to 350°F. Prepare an 8x8-inch square cake pan by using 1 tablespoon of coconut oil to grease the pan. Line the bottom with parchment paper. Set pan aside.

Step 2

In a medium sized microwave-safe bowl, heat almond butter and coconut oil until melted and smooth. Add brown sugar and using a whisk, whisk until smooth. Add eggs, vanilla, and almond extract. Whisk together until ingredients are smooth. Set bowl aside.

Step 3

In a large mixing bowl, add cooked brown rice, gluten-free flour, salt, and cinnamon. Mix with a rubber spatula to combine ingredients. Pour the wet ingredients over the ingredients in the large bowl and stir with a rubber spatula to mix well. Add the chopped apricots, pistachios, and coconut chips. Mix to incorporate the fruit and nuts. The batter will be thick.

Step 4

Transfer batter to the prepared cake pan, and using a rubber spatula, scrape bowl well. Using a small off-set spatula, evenly spread-out batter. Place pan on the middle rack of the oven and bake for 35 minutes. To evaluate for doneness, the bars will be a golden brown, and the top will look set and shiny. Place baked bars on a cooling rack to cool to room temperature.

Step 5

To serve, remove bars from pan by first running a knife around the edges to loosen sides. Place a cutting board over the pan. Grabbing the pan and cutting board, flip over so the bars will be on the cutting board. Lift the pan off and remove the parchment paper. Using a sharp knife(a serrated knife will also work well), cut the bars in half lengthwise. Then cut each half into 5 rectangular bars. The bars can be wrapped individually in parchment paper or stored in an airtight container.

Additional Tips

Other dried fruits may be used instead of apricots, as well as using other tree nuts and/or pumpkin seeds. Another nut butter can be used in place of the almond butter.
